After making the exploding gateau for Valentines day I had some left over butter cookies, .......and some cream....and some chocolate, so I decided to make a version of what I had in the house, so with a butter cookie base, thin coat of blackberry jam, aerated chocolate (which I should have made much thicker) chocolate ganache and banana puree with beet caramel hazelnut praline, strawberry amaretto soaked chocolate sponge, amaretto mousse, chocolate mousse...............I then had to glaze it (didn't have enough chocolate left for the paint gun....darn......I love that part :-)). So, I made a glaze and just before pouring the glaze, I trimmed it and poured some LN2 over it just before pouring the chocolate glaze. Effects are pretty cool. Trimming the cakes gives a nice preview of upcoming flavors. :-)
