I was looking at the recipe for Melty Blue Cheese slices and thought I'd make some for burger this week but I don't have Sodium Cassinate and thanks to Canadian customs, I won't be able to order from ModernistPantry in time.
I assume the Sodium Cassinate is to boost the protein content. Could I substitute Skim Milk Powder and if so, in what ratio? I do fortunately have SHMP and Sodium Citrate on hand and made some gorgeous Melty slices from a blend of very old smoked gouda and smoked cheddar.
