Amazing deconstructed tiramisu

Michael Laiskonis is a genius. I have yet to visit Le Bernadin, despite living in the area. But this dessert is gorgeous and really doesn't seem very difficult. The caramel mascarpone "cannoli" in particular is something I'm going to steal.

Laiskonis left LB four years ago, and I don't think he's worked in a restaurant kitchen since then. He's the creative director of the Institute of Culinary Education in NYC. But yes, the man is an absolute beast of a pastry chef.
I was lucky to be a diner on the Top Chef: Just Desserts episode for which he was the guest judge. Pretty sure I was the only person in the room who recognized him, as other guests started coming up to me asking, "Are you the guy who knows who that dude is?" Massively fun experience.

I mean, Laiskonis isn't the main reason I want to go to LB, but that sucks just the same. There are a lot of videos of his desserts, and given that I started by cooking desserts, I feel I should return to my roots and make some of his dishes.

Do you have the "On The Line" cookbook? There are several of his dessert recipes in there, including his famous 'egg'. He also appears in (I think) a few episodes of the first couple seasons of 'Avec Eric'.

I also live in NYC and haven't been to some really big names. My problem is, there are so many good restaurants that are so much cheaper...at this point, I'd rather have 10-15 of those experiences vs. one of the big names. I'll probably go nuts for a month if I decide to move and just hit up every single amazing michelin star spot in town.
