No pistachio paste to be found :(

Hello,

Where on earth does the private consumer purchase top quality pistachio paste these days? I've approached PreGel and Mec3 who reportedly make some of the best and they will only supply the trade. Where do you guys buy this stuff? Offerings on Amazon are rather limited and mostly include almonds and sugar etc. I'm just looking for 100% pistachio paste.

I've managed to make some of my own with a lot of patience and a stick blender but it's not as smooth as the production paste.

ChefSteps put a link in the recipe where you can buy some: pistachios, olive oil, and salt. For making nut butters the consistency of what you find commercially produced, you need a specialized nut butter grinder or a conche. They will give you that ideal consistency, however they are several hundred USD. Blenders, stick or conventional, are not ideal for making nut butters because they tend to heat up the nuts as they go, which tends to make the fat separate out, and will often not get it as finely ground. Check out their ingredient link, and look into the nut butter grinder to see if either/both are useful to you. Good luck!

Thanks a lot for the info. Yes the stick blender really heated up the nuts and the end product was not ideal. The main issue is justifying the shipping cost to Southern Africa, and a European product is more cost effective due to the savings on import duty from the EU. I've been in contact with Mec3 who've indicated there's a reseller who MAY be able to help with my request, so if I can avoid importing any I will. But thanks for your reply.
