So this is based on the Jalisco Pear cocktail from the Gramercy Tavern, but I put my own spin on it. No pictures because it was consumed before I thought to take a pic.This is one of the best drinks I've had (and I have the luxury of being able to go to Dave Arnold's cocktail bar Booker & Dax whenever I want), and you should definitely try it.
.5 parts lemon juice
1 part tequila blanco
1 part creme de cassis
2 parts pear brandy (apple brandy would be great too)
a dash of allspice
I made a few minute adjustments by adding a tiny bit more lemon and tequila because it was a bit sweeter than I typically like, but the proportion is a good base and is quite easy to tweak to your tastes.
Shake it up with an egg white for a while, pour into a coupe glass and grate fresh nutmeg on top. The result is a BEAUTIFUL pinkish purple cocktail with a nice foamy head. I'd recommend flaming a lemon peel and wiping it on the rim of the glass before pouring, which I didn't do, but would add a lot to the drink.
