Menu Concept
This menu is a culinary commemoration of the revolutionary Spanish poet, Federico Garcia Lorca. Through the cuisine of his native Andalusian home, he will be reborn again for one night.
Opening cocktail
- Blood Orange + Pear White Sangria with rosemary or other herbed syrup.
Menu
– Salmorejo with crispy garlic and orange oil.
Paired with: Vermouth Spritzer.
– Tortilla de Camarones with lemon aioli.
Paired with: Albarino Xion, Bodegas y Vinedos Attis 2012.
– Stuffed mushrooms (champiñones Rellenos) of caramelized onion & raisins with bed of red wine reduction and topped with bacon chip.
– Fish balls (albondigas de Pescado) of cod & squid in sauce with white wine with clams and shrimps and crowned with crispy squid tentacles.
– Traditional Pan de Calatrava with cinnamon ice cream and topped with almonds.
