Not Your Nana’s Corned Beef and Cabbage Hash

The hash with a 75 C egg. I used red potatoes rather than baby potatoes and cooked the carrots until just tender rather than making a puree.

Beautiful. But I can't help wishing I could see that sexy egg yolk oozing everywhere.... LOL. My brother recently asked me what I would do if I had to choose between giving up beef or giving up eggs (in every usage). I sadly told him I'd probably have to give up beef.
