We will eventually start adding some recipes. He just has so much school work a lot of his cooking right now is by eye and tasting (More salt! more ginger!) etc. So we have get the timing right and do a cook book. But I posted the recipe for the lemon grass noodles above. If we can we will post in the recipe section of the forum in the future and also have a recipe section on his site.

The broth
4 cups of chicken stock.
1 cup of water
2 table spoons of soy sauce
1/2 teaspoon of garlic
Couple of turn of black pepper
1 stalk of lemongrass
1 splash of vinegar.
1/2 lime cut in to 2 pieces
1 stalk of scallions
Lightly pound the lemongrass to release flavors and cut in to 3 inch pieces.
Add everything to a pot and boil for like 5 minutes.
Taste it... adjust seasoning to taste. If it feels a little weak add chicken powder.( you can find it in the Spanish section of the supermarket)
If lemongrass flavor is strong add more stock or add more lemongrass is weak etc.
The meat.
.5 pounds of ground pork
1/2 stark of lemongrass
Sesame seed oil
1 teaspoon of Korean bbq sauce
1 clove of garlic
Agave
While broth is boiling get about .5 pounds of ground pork pat dry it with paper towels.
In a hot pan add sesame see oils then add the ground pork and lemongrass break it up so there is no clumpy bits of pork. Keep stir frying till the pink is gone.
Once you start getting it Brown and a little crispy add the garlic and bbq sauce cook for 1 minute more.
Remove from heat and put in to a bowl.
Add about a teaspoon of agave and a dash of sesame oil.
Taste it... Adjust add salt and pepper. Adjust seasoning little more agave to sweeten it if needed.
Back to broth.
Add some Chinese broccoli or bok choy cut into 2 inch pieces to the broth till it changes to a dark green,
You can also add some shitake mushrooms also.
Noodles
In clean boiling water add Chinese soft long life noodles.
Boil for about 3-4 minutes pull one noodle out and taste it...it should be firm not mushy cook till desired texture. Drain noodles.
Most people will cook the noodles in the broth that is wrong... It will make the soup cloudy and also the alkaline from the noodles will change the flavor of the broth.
Plating
Remove all the lemongrass stalks form the broth
Add noodles to a bowl then the broth make sure everyone has greens then the meat...
Top with diced fresh scallions. And a soft boiled or hard-boiled egg sliced in half in the soup. Add a lime wedge on the side.
Done!
You can find the noodles at your local Chinese market they are in the refrigerated section you can also try the Japanese market. Should about 4 bucks for 4-5 portions. You can try online to fine them.
