Tobacco ice cream

I want to make a tobacco infused ice cream however I understand it is a toxin. How can I get the tobacco flavor without the toxins. Thanks!

Have you seen the "Cook's Tour" episode where Anthony Bourdain, Eric Ripert, Michael Ruhlman and Scott Bryan go to The French Laundry where each gets a largely individualized tasting menu during the course of a normal dinner service? One of the dishes that Keller makes was a tobacco-infused coffee custard with foie gras mousse for Bourdain.

Unfortunately, they do not share a recipe. Was just curious if you had seen that episode, because it shows that tobacco infusions are not only doable but are doable at the highest of levels. (That show first aired when The French Laundry was among the top two or three restaurants in the whole world.)

Not sure if you would use the tobacco leaves or if you'd actually light the cigarette (or cigar) and smoke the crème anglaise base to create the infusion.

The Alinea book has a recipe for tobacco custard. They basically steep tobacco in hot milk/cream for a very brief amount of time and then strain.

Very brief is the key phrase, nicotine is pretty water soluble. I worked on chocolate pipe tobacco extraction at The Fat Duck years ago. One sip of the extract sent Heston's and my heart racing, profuse sweating, and a wave of nausea. Basically, I tired to poison us with nicotine. Recommend a very brief warm extraction to taste in a very high fat mix.

Not trying to be sarcastic but what do you consider brief? Minutes (less than 10) or seconds (less than a minute).

i've never touched tobbaco in my life, and i wouldn't have much clue though but i wonder if you could use smoking technique to infuse the custard?

I was doing a coffee and cigarette ice cream for s & g's a while back and I definitely agree with @Chris. The difference in a few minutes means a difference in an undertone of tobacco or having a nicotine hangover the next day. We were making it with pipe tobacco too, gave it a richer, less harsh flavor than cigarette

Depending on where you live, such as somewhere in New England, you might be able to buy fresh and or fresh dried tobacco leaves from a small producer. I don't know if there is a source on the Internet, but getting some from a farm would probably lead to a purer flavor if tobacco, not to mention avoiding any chemicals or additives.

Just checked it out, and there are MANY online retailers for fresh and fresh dried tobacco. Might consider calling/emailing and asking what might be a compatible type for your specific use.

But fresh tobacco is much different than the familiar cured stuff.

How much Tobacco would one recommend for a cup or quart of whole milk for a safe infusion? I've been experimenting with Ice cream lately and would love to try....without making myself sick ha.

I may be wrong but I remember reading somewhere that can roca does a tobacco ice cream, where tobacco smoke is released onto the ice cream base as it is churning

@Lou — Start with about a 1/2 Tbsp of loose tobacco infused for about five minutes in warm milk. Adjust time from there.

The toxicity is amazingly high, but it's hard to get that much into your body. I made some tobacco ganache recently and I looked it up. I think it was something like eating 2 cigarettes would make you very ill/die. I did 10g of pipe tobacco in 200ml of cream at 80c for 2 minutes. Then I strained it without pushing on the leaves (I think that was a tip from Chris from somewhere else) and made it into a 1:1 ganache.

(Don't quote me on those numbers, it's from memory.)
It was spectacular, I gave one to someone to try without telling him what it was and he said that it transported him back to childhood, pretending to smoke his father's pipe.

If you write down your method then I'd love to see how you end up doing it. I never remember when I'm actually doing it.
