So far, even with the smokerless ribs, the flavor is very much the same, but subjectively at this point, the feedback from those who have had it is this version is smoother and a touch richer (they didn't know what I did with the ribs). I was concerned with playing with it and as
@MathewSnyder mentioned was worried it might be too smoky. But because the ribs are only part of the recipe, I think it would be tough to do using only the ribs (there's1kg ground beef that goes in at the end as well). We will see how the final flavor turns out for tomorrow and will probably even change the sour cream sorbet and merge it with lime juice for a sour cream/lime sorbet. Not really a stretch at all.
