I don't necessarily mean a specific one at a specific time, but would love to hear what meals really inspired your or just hold a lot of nostalgia for you, and how that influences what you cook.
Mine is probably Filipino breakfast, which is a -silog. Which is a combination of the word "sinangag", which is fried rice, and "itlog" which means egg in tagalog. You fry some rice and put a fried egg on top and pair it with some "ulam" like tocino, or longanisa, or spam or whatever. Combine it all and you have longsilog, tocilog, spamsilog, whatever. I love this and look forward to it every time I go to my parent's house. It's usually just bacon and eggs and singang, super-simple and super-delicious.
I always come back to wanting to cook more Filipino food and figuring out how to merge trad methods of things with non-trad versions of things, like salmon 104 °C sinigang or sous vide adobo (I've tried this a couple of times, pretty awesome).
