You always plate so beautifully. Would you consider doing a class on plating? Thank you.

There's a little bit of a discussion here in the
Design a Dish project
. Also the new video for
Salmon 104 °F
shows how the plate the dish a few different ways. Someone else on the forum (sorry, I forget who) posted
this link
, which is a pretty interesting read on some of the different tried and true approaches to plating.

I would be interested in any tips to keep food hot during plating. Any thoughts ideas other than plate warming would be welcome.

Thanks Odo, plating food is one of my favorite things to do in the kitchen. I would love to eventually do a plating class. What are some of your favorite food plating styles?

There are many different ways you can try and combat that problem. When serving, I like to keep my oven at around 175°f. This allows me to keep my dishes warm before I start plating as well as sides for a little while without overcooking. Lastly if you are serving up a piece of sous vide protein that was cooked at a low temp, it's always good to give it a quick final sear or baste to warm it up on the outside.
