it has to do with living conditions, bacterial association, meat composition, and metabolic processes. mind you, chicken can be eaten safely when cooked at lower temperatures. I cook my chicken to an internal temperature of 150°F, and ChefSteps has a method to prepare chicken for chicken tartare i.e. raw chicken. I hope that helps.

I cook (SV) my chicken and turkey breast to 140 F and the dark meat to 149F. medium rare duck breat should be 138F. I am still alive and enjoying tender, moist meat....however I drink lot of wine...dont re-kill the poultry... be gentle...
