Creo que podrían introducir un poco de ingeniería gastronómica. Con cosas hechas en casa como un sous víde casero y los cost. Centrífugas etc. Otro tema que no tocan aún es la deshidratación por sublimación. Y lo último sería q en algunas recetas ponen algunos químicos pero no mencionan su función. Muchas gracias

So are you looking for how to build your own immersion circulator? There are already many plans out there to build your own device, it won't be as technologically advanced as theirs, but it will suffice. My first one was home made, and it was a few years before I discovered their website.
As for centrifuges, they actually commented about this in another video. While they do have one, or had access to one, they don't really like to use to because it detracts from what they want to do. They don't find it as enjoyable or rewarding as other techniques.
I honestly don't think they've ever done anything really with dehydration. If you want to dehydrate food by sublimation, you're going to need a freeze dryer, which isn't cheap. I have seen someone make a home made one, but you need a very powerful vacuum pump, something to generate temperatures far below freezing, and something to conduct this very cold temperature.
If you click on the chemicals in the ingredients list, often times it will take you to an ingredient page. Some of these do not have all the information, but you could always do an internet search. While they put most of it out there, there is some work you have to do yourself.
