My coming week is really busy, so I'm thinking about cooking burger patties sous vide then leave them in the freezer. What would be the best way to reheat the patties?

Re-therm in the water bath (you can go straight from freezer) at or slightly below the temp you used to cook, then sear in cast iron or on grill to finish.

Sear frozen in a hot pan with a bit of butter or oil, get a good crust. Then put them in a 275°F oven to bring up to your desired temp. You could reheat in the SV but that will take almost as long to reheat as it did to pasturize originally.

If it's less than 5 days (probably fine for twice that but that's your call and fridge temp) you can low temp to pastureization then chill down quickly enough and refrigerate. When ready to eat you can dry then therm by searing or frying Advantage of this method is 1) diner is ready faster and 2) when the sear is done the burger center is likely up to temp and ready to go. On a hot stove you are looking at 30-45 seconds a side.

If you're going to re-therm in a water bath it won't take any more time than just cooking them once. So I'd freeze and then cook. With things that you just heat to final serving temperature, there's no point in pre-cooking right?

Correct!...though I think you meant that it won't take any less time.
