I'm puzzled by this recipe too. There's no garlic, which kind of defines sauce aioli, but I bet that's just a typo. ( or maybe they meant to use a flavored garlic oil?)
I also wonder if Chris or Grant will explain why they used powdered egg yolk and glucose syrup?

Mis-titled guys. It's a mayo, not an aioli. In the style of a very eggy, very stable Kewpie mayo. The egg yolk powder is added to boost flavor, the MSG is for the umami-quality you find in Kewpie, the glucose syrup is for mouthfeel and sheen without too much added sweetness.

i make kewpie style mayo with whole egg, oil, salt, lemon juice, mirin and rice wine vinegar. it looks and taste like kewpie but fresher.
