That's what it looks like to me (for the second one at least): methocel and egg white foam that has been baked or dehydrated at low temp.

Actually, it may be a crispy milk foam, and as luck would have it, there is a recipe on this site for it. You can put the milk foam into a dehydrator.

The first picture looks like some kind of green vegetable that's been turned into film, paper, or some other method. This can be accomplished a number of different ways: pure cote, ultra tex, etc.
