Baby Octopus

Question from Ginger: Any suggestions for sous vide baby octopus? I tried it at school a couple weeks ago with OK results but could've been better. After searching all over the Web for guidance I settled on 83C for 2hrs. Still a bit chewy but beautiful color!

Personally I like it more tender, 83C for 3 or 4 hours. Then finish in a hot pan or a quick grill.

That was the conclusion I came to also. I only had 3 to work with to make one lunch plate for my chef so I was hoping that the lower amount I was using would help translate to a diminished cooking time. 20/20 hindsight says that was faulty thinking. They did grill well and look beautiful, just a little chewier than I had hoped.
