Hi ChefSteps, what mayonnaise do you guys recommend on your burgers? Did you use the Kewpie style mayonnaise in the burger video?
Also to make a brioche hot dog bun, what do you suggest?

I add some miso to my mayo especially in burgers. I make it by scratch..basically just a classic mayonnaise with some miso added. The savouriness is incredible.

The beauty of cuisine is in it's endless variety. When you know the role of mayo in a dish, you are liberated from it's current role and are free to explore the endless possibilities it offers. Mayo offers mouth-feel, to off-set {counter-balances) the savory elements that we generally think of as the "main" element of the dish. Most dishes can be broken down into three elements; savory, acidic, and fatty. The balance of these three elements determines how "popular" a dish is. Don't follow the pack. What flavors do you like with a burger?
"Flavor bouncing" is a technique used by so-called world classed Chefs that take one ingredient, write down an ingredient that agrees with it, then another. If the three flavors agree with themselves they run with it.
Great food is actually really easy. Just know the fundamental rules and the rest just falls into place. The rest is presentation.

I don't think 3 is enough. Sweet, salty, savory, acidic, fatty are the main 5. And then there's spicy.
