While the Amazon order of squid ink was pending, decided to try the recipe with food colouring...& here it is... Succulent & beautiful.

Filled steamed buns with sousvide octopus, cucumber relish, pickled onions, watermelon radish & scallions...a feast for the eyes & mouth!

Can't wait to try with squid ink...

Baked the left over dough into slider buns...

Poached tentacles in parsley & bayleaf water x 12 seconds ( 1 tentacle at a time). Chilled. Re-washed & removed extra floppy skin. Sousvide x 4 hours at 85C w slivered garlic, parsley sprigs & thyme & olive oil.
