Seasoning & Recipe ideas

My new pans from Darto arrived and I they are cleaned and in the oven with their 1st coat of flax seed oil ( a very very thin coating of it). Do any of you have suggestions for seasoning carbon steel pans. Also would you be willing to share your favorite recipe that you cooked in your carbons steel pans. My first one will be 3 Cup Chicken but I am looking for ideas of meals you have tried and enjoyed.

I had to do mine twice b/c someone here ended up not treating it properly and there was a sticky residue. When I reached out to them, they were swift to respond. Bottom line, season it more than once using very thin layers of oil as they show in this video (see link). they also said 4 times would be fine, 10 is too much. I did 5 inside AND out (as you'll see in the video) and it has worked great since. www.darto.org/videos

I learned a trick from someone here, sorry I can't remember who. But anyway on the inside they recommend adding a little liquid soy letcithin and mix it with the oil before applying (interior only). It makes a very good non-stick surface. I just used oil on the exterior. Treat it like cast iron, scrap out the residue, hand wash, dry and lightly oil after every use and it will last years. It made my Darto work like my 25 year old cast iron. I mainly use mine for searing but I did make the CS Dutch baby in it. This pan was great for that. I had a previous failure making the Dutch Baby and when I did it the second time using my Darto, I made no changes others than the pan and it worked great.

I saw on cooks illustrated that frying potato skins in oil and salt works well

Not that I'm aware of (maybe CC). But really, heat on high and coat with thin layer of oil. Repeat. I'd say it's like washing hair, but I don't have any. :-)
