Creamy Pistachio Butter

Hey guys!

I would really like to try out your creamy pistachio butter!

But i cant get hold of Non hydrogenated Vegetable Shortening in Denmark.

And i dont have a conche to make it in

Is there any other way that i can make it? If i can use something instead of the Shortening, and make it in something else than Conche?

I really hope you will ansaw me on this question! Love you guys, i've learned so much from you!

You could use a Vitamix (or other powerful blender) but the result won't be as smooth. A while back, I made pistachio butter in a Waring commercial blender with good results, tough I didn't use any extra fat, so the mix was super-thick and the blender overheated during the process. Here's a picture of the final product:

FYI - I haven't tasted the CS recipe (no conche for me either), but I made a pretty decent pistachio butter using a recipe in Thomas Keller's Ad Hoc at Home book a while ago. It used milk, heavy cream and pistachio and a blender. It turned out fairly well although I should've made an attempt to remove the skins on the pistachios, I think that would have improved both color and taste. Texture was great, plus a byproduct of making the recipe was that I had some pistachio-infused milk left over.

Hi Niklas,

This how we make pistachio paste

-Shell and wash your pistachios to remove any dirt.

-Pour them in high power blender and start grinding.

-A few minutes into running, you will get pistachio butter. It has a coarse texture though it is smoother than pistachio flour.

- To make pistachio paste you need give the blender a few more rounds. Be careful not to overwork the machine as it may become heated.

Pistachio paste has a smooth texture.

I have seen people get frustrated with making pistachio paste.
