Round 2 tonight... braised lamb shank with 4 hour red wine onion (and I'm not talking sous vide) sweet potato puree and saffron rice. Playing around with this dish for the master chef audition this Saturday in Dallas.

Eating instructions: fork the charred sweet potato and then braised lamb down to the cabbage marmalade and finish with a smoosh of charred carrot and sticky rice. Pickled beets are to be eaten at will.

Unfortunately John some personal matters came up, literally last minute, and I wasn't able to make the trip... I literally had everything ready to go... oh well, I'll try again next time, I'm a firm believer in everything happens for a reason. Thanks for following up!
