These little guys were freaking filthy when I brought them home, but I cleaned 'em up real purdy. It took forever.

After an afternoon of washing, trimming, and processing, I had pickled ramps, ramp butter, and ramp chimichurri. Aww yeah.

I can never find ramps. They had them one time at Whole Foods in El Segundo, and I pretty much bought them out. (Seriously, I think I got like $40 worth of the buggers) I've never seen them at my local farmers market, which seems odd.

They don't last long, so I like preservative methods like pickling.

My favorite would be yours as I can't find them, but I am going to try to plant some. That ramp butter really would go great on a steak, or lamb as you did.
