Willing to try the
Lingcod and Tentsuyu recipe... im stuck at lingcod! here in italy seems impossible to find even a translation for this fish... the only information i have available is its scientific name (ophiodn elongatus), the fact that it is not really a cod, and that it live only in the pacific from the california to alaska. I assume i can't find it in italy (i humbly asked to some shop and they all watched at me as if i asked for a t-rex steak
)
so im wondering what kind of substitution i can use... cod? smooth-hound? conger? im just guessing based on the photo of the flsh flesh in the recipe...
any help will be appreciated
