Watched an episode of Unique Eats over the weekend that featured Marc Vetri preparing a porcini lasagna with Parmesan cream and blueberries. I don't really like blueberries, but I wanted to try to interpret the dish myself. Used a decent quality balsamic instead, and also local wild mushrooms (chanterelles, morels and oysters). No idea how it stacks up to the original, but it was pretty tasty. 5/7, will make again.
