Whale, miso, ssam sauce, 63 degree egg

A lettuce wrap with whale tataki style, South river brown miso, pickled onions, angelhair chili, ssam sauce, redboat fish sauce and fried shallots. Topped with 63 degree egg, which probably ended up more like 62 or something

What is the consistency of whale meat? Is it like any other fish in terms of texture? Unfortunately, we do not have much whale in the southern United States

The texture is like lean beef, not like fish at all. I live in Norway and here you can find whale in stores quite often.
