I haven't eaten at Bonefish Grill in a few years and then the only thing that was interesting was the "Bang Bang Shrimp". It was the texture and not the sauce, don't get me wrong the sauce was good just not enough zip. I researched some copycat recipes and they were all over the place. I had a gluten free guest so I was adjusting a little....first batch rice flour and cornstarch on wet shrimp, turned out good. Second batch just cornstarch on slightly damp shrimp, better. Third batch was killer. I have been playing around with the CS Fish and Chips batter so I borrowed a part of it. I made a cornstarch, Maldon Salt, slurry with vodka and dried the shrimp first. Holy Shit were they crispy!
