Potato Salad Risotto and smoked ribs

Familiar flavors, just a different delivery. Potato salad risotto, Smoked short rib and triple cooked chips (which is a tip as to what I did with the peels for the potato in the potato salad flavor). For desert, dark chocolate chunk cocoa gelato, flourless chocolate cake and blackberry sauce.

Potato salad risotto. Do go on.

Well, I thought a traditional rib side is potato salad (I was traveling when I came up with the idea). When I got back, the kids asked if I would make ribs and they really like the "fat french fries" :-). So, while blanching potatoes, I roasted the potato skins. Took my veggie stock and infused the veggie stock with roasted potato skins, so it had a mild potato flavor (which all potato is anyway). Then, to finish the risotto, I used an acidulated (think pickled) butter, pickled mustard seeds (nice pop), dill pickled cucumber diced small, lots of chopped celery leaf and a bit of dill. So a warm creamy potato salad that still had the pop of the mustard seeds and crunch of the pickled (which held up fairly well). I now look at most starches, rice, pasta, whatever as delivery systems for flavor (or sauce). Though some can be very different, they are excellent in being the delivery method for other flavors.
