Pane e panelle

In Italy (more precisely Sicily) we have a street food called "pane e panelle". Pane means bread and panelle are a sort of deep fried gnocchi made with chickpeas flour. Usually, it's a toasted sandwich filled with a lot of panelle. I thought it is time to put an asian twist on this italian classic: steamed buns, panelle, pickled cucumbers and wasabi kewpie mayo. If you ever serve this to a true sicilian, he will kill you (or at least put a horse head in your bed). Happy meatless monday!

I know the filling isn't fried cheese, but in my mind it's fried cheese. Looks great though. Seems like it could be a riff on a falafel wrap. Bet it's delicious.

if you want to make panelle, here is the recipe: mix 1 part of chickpeas flour with 3 parts of cool water and season (you can put finely chopped parley, rosemary...) pour everything into a pot and cook at medium heat stirring constantly. when it pulls away from the sides of the pot (or when you are tired) quickly transfer it to a loaf pan, or anything else with a good shape, and let it cool completely. slice it up and deep fry!

haha yes it does look like fried cheese (or tofu)! I like the idea of falafel as a filling for steamed buns, I'll try it next time!
