Binding on black bean burgers
Sergio_Mora_Moreno_43
On the black bean burger recipe it calls for Activa and sodium caseinate, but I find it difficult to get Activa where I live, but maybe the caseinate, will it work with just the caseinate? or can I substitute it with something else?

Activa is what's doing the binding in that recipe, so no. The sodium caseinate is there to give the Activa some extra protein to "glue" together. The proteins in the beans alone isn't enough, which is why the caseinate is added. But if you add it without the Activa, the patties won't hold together properly.
