I was hoping you guys would be able to help me with my quest. I am trying to get powdered sugar to clump into small size balls if you will- around 1/2 cm circumference. Maybe some of the modernist ingredients you guys work with would be able to accomplish this? I have tried to make my powdered sugar without cornstarch thinking it may then clump up but that didn't work. I have searched the Internet endlessly to no avail...I know it can be done as there is a particular ice cream specialty I am trying to copy- basically an ice cream ball that is then rolled in these powdered sugar balls...
