When brining the fish, does it make a difference if you portion it before or after?

not really.... the portioned is the way I go it just seems to cook more evenly and quickly...

It is likely that pre-portioned will have a more consistent texture all the way around whereas brining in one piece then portioning is likely to leave an end (or two) on each piece where the brine has not had an opportunity to penetrate/effect the protein (or perhaps not as equally as all surfaces). Obviously, the longer you brine the more penetration and change in texture.

Thanks for the answers. I guess I'll play it safe and portion the fish before brining.
