This is for 4 people...spicy sausage, chorizo powder, garbanzo beans and parmesan. Sautéed the sausage, added the beans and fried them till they started popping....
this tasted a lot better than it plated. Brined scallops, sliced thin, pickled ginger, and a very bright, lemony, avocado puree

I noticed I had 3 scallops left so I fired up the Darto, patted them dry, a touch of peanut oil and got them right. Crispy on the top, perfectly cooked in the middle and sashimi on the bottom. little kewpie and sriracha.....
Fried grouper cheeks with yum-yum sriracha ....
SV 138F pork tenderloin, blue cheese cream sauce, pickled corn and mustard seeds..
SV NY Strip 128F, grilled onions and spinach, Hong Kong Fooey Paste...
I hadn't planned on dessert but decided after the steak to make something...
I give you bananas soaked in 151proof rum, flamed, topped with toasted pine nuts, grated chocolate and coconut rum whipped cream...

I am sure most of you are like me..."our own worst critics" for once I was pretty satisfied..
Dinner DID NOT suck......
