Melted cheese burger class problem

Trying to make a Roquefort melty cheese slice by following the blue cheese directions on the burger class. It's more like cheese spread than a slice. Anyone have any suggestions?

Yes.
Left it to mature/set for 24hrs.
It was like 'Laughing Cow' or 'Dairylea' cheese spread not like a craft slice
It tasty fine, melted too easily, in sliced form (used a steel wire used for foie) it was unmanageable.

Try chilling more and cutting it with a hot wire?

This is Stilton, perfectly set and texture but not flavour not as pronounced as the Roquefort
