Whengoing through the goodie bag late last night and the sea beans, morels and Maitake I brought back I wanted to use a little something in this morning's Mother's Day breakfast. I used Nick Gavin's spin by using homemade buckwheat flour and used home made almond milk (works really well-almond milk doesn;t always), vanilla but the keeper was I subbed the light muscovado brown sugar for the cane sugar (Just make sure you break it up with your fingers when you put it in the dry ingredients or it clumps-if that happens, you can still do it and break it up/pinching it in the flouretc). The pancakes were pretty awesome (Kids already love the buckwheat-thanks Nick!) and just when I thought it couldn't get any better. To go with them, one 63C yolk, a poached egg, sea beans sauteed with butter and truffle oil and brown butter morels. Simple Rockin breakfast. :-)
