Yes I tempered the chocolate SV, 46°C until melted; second bath 27°C for a few minutes then upped the temp to 32°C for 5 minutes, massaging every now and then.

The biscuits are just on an inch wide and one recipe of the dough will easy make 100 each or 50 sandwiches. I will do a two stage coating next time. Pipe the top, let it run down the sides and dry. Turn over, pipe the bottom, let dry and eat.

They look great, I could eat a few.....dozen. By chance did you temper your chocolate sous vide? You could place the cookie on a disk of chocolate (piped) and enrobe (pipe) 90° F tempered chocolate over the top. Keep multiple sous vide bags fairly small at 90° F after tempering in the water bath to maintain the tempering and cut the corners to pipe. Kenji has a good article on tempering chocolate, method #3 is sous vide .
