Short ribs work great! I've done tri tip as well, but I prefer it more on the medium rare side. But the tri tip was really good.

+1 on the tri-tip. I want to try toasting a small bit up in a pan and using it as garnish sometime, like an ash; I think it would pair well with fishy type things that are paired with an umami-laden sauce. The smokiness of the rub should play well with it.

Doing short ribs in a similar fashion could possibly be cheaper but its bone in so you might be getting less meat per lb.

I've done it for short ribs, Brisket and cheeks, but most of the time will use a longer cook (as an example, I have a Brisket in now that will total 48 hrs). The first thing you should know is not everyone likes the rub, so if doing it for a crowd, it would be something to consider. I like it with and without. As an alternative (for those who may not like it), you could do other portions with the sweet sticky glaze as that works well. For a "smoky" version, take 50% of the weight of molasses in the recipe and add that much liquid smoke (it rocks). So you have lots of choices. :-)
