What recipe did you use? Looks like to much butter to me. If it's the Chefsteps recipe, you did something wrong, ratios not right and you didn't refrigerate long enough. Check the recipe closely. I make the ChefSteps recipe regularly and mine are always right on, it's my go to cookie now.

I'm based in the UK. So we don't have pastry flour so I changed it to half self raising and half plain? do you know if that would of been the reason?

That is probably the problem. The self raising has a levener (baking powder) already in it, and usually some salt. Try it again, using just the plain flour (All purpose), and be careful with your measurements. Don't skip or rush any step, especially the refrigerator (I usually put mine in the freezer for 15 minutes just before baking). Baking is a formula that requires exact measurements and ratios, you can't change the structural ingredients of a recipe without changing the results. Personally, I cut back on the salt on this recipe, yours would have probably been salty too. You can change the chocolate chips for white chocolate, add nuts etc without problems, these are not the structural ingredients. These are mine. The pressing isn't required but I really like the texture and how professional it makes them look.
Let me know how you do on the next try and send a photo too.

Temperature might've been a problem too. They look like they spread too much and browned way further.
