Coffee paste

Hi, I have seen a video were Grant makes a coffee paste in a conche, I have tried it but the machine stopped as the coffe only ground into a fine powder and it blocked the scraping blades. Do you know what do I need to do in order to make coffee paste?!

What else did you put in there, besides the coffee beans? I'm not sure of the video, but I do know the recipe for Dark Matter, which utilizes coffee beans instead of cocoa beans. Also, are you using a conche, or are you using something else?

Yes it was a conche, but I did not had soy lecithin and I was not sure how much cocoa butter in need to put. Can you tell me please!

You are probably going to need the liquid soy lecithin, it is the emulsifier that holds everything together and supplies a bit of the lubrication, I don't believe you can leave out that important ingredient.
