my name is Skip.

I tried to make fizzy fruit

I have a small Styrofoam cooler, about a pound and a half of dry ice...grapes, strawberries,cherries and some oranges

tightly wrapped for around a day.

More fizzle,than fizz

what happened...what did I miss

If your cooler was sealed, perhaps a day is too long. I put a whole watermelon in a cooler with dry ice for ~6 hours and it came out mildly fizzy. Try shorter time points or putting it in a whipping siphon/ISI to force.

24 hours would be a bit long for a small amount of dry ice. For me I've done 24 but had allot more dry ice and some ended up being frozen (while other quite fizzy). Would try a shorter period with 1-1.5lbs (e.g. 8hrs) and see how it comes out.

The 1st time I tried making fizzy fruit I used a Styrofoam cooler. The fruit was in there for 24 hours and it was very mildly fizzy, and half the fruit was frozen. I made it a 2nd time and I used a plastic cooler similar to the one in the video. I had MUCH better luck with the plastic cooler. There was more room for the fruit to stay away from the dry ice so it didn't freeze and I think the plastic does a better job holding the internal pressure and as a result, had a better effect. I also only had it in the plastic cooler for approx. 14 hours.

I also used styrofoam coolers and left them for 24 hours. And despite using more dry ice than suggested, I found effectively no fizz and almost lukewarm fruit.

It's a shame, since I bought a ton of fruit for a get-together.

I also think that less time + a plastic cooler would work better. I'll give it another shot.

Just don't put dry ice in a siphon. Dry ice expand about 800 times it's volume when sublimating so that can be very dangerous!

Use a carbonator -- yes, it's limiting in the fruit size and small berries are best.
