My King Copper river salmon arrived yesterday. So after I broke it down (first time unsupervised-go big or go home ;-)..). Had a small piece (had to taste). OMG! Get it now! Got mine through Andrew cityfish.com (visited during the recent CS visit). For tonight, I'm cold smoking some for a chowder, cold smoking some with glaze, mi-cuit some and a butter poach. It's gonna be a salmon dinner. :-)
