How was the salmon tail this way? I brined mine, smoked part and trying the katsuobushi. Am curious as to what you thought of the texture as it has a reputation of being tough?

Todd how did you decide to do the katsuobushi? Wet or dry brine?

have 3 small pieces on the go. Two wet brine, one dry, one of the wet brine I also smoked. will see what results are like in a few weeks

Not bad actually! I don't usually fry fatty fish but this turned out good. Not tough, just really melty from all the fat.
