Air Bubbles in my flavorfull liquid

it seems like no matter how long I leave my solution resting or even in the atmosphere chamber the air bubbles are so many that I can see them through out the whole thing.

this is happened to me on every batch that I've tried this past week (4 or 5 give & take)

any suggestion guys

I'm a newbie, but for me...I put it a shallow pan, wiggled it about to get the air bubbles up then hit the bubbles with a blowtorch.

ok here's the thing though the amount of bubbles that I'm getting is crazy

what does your solution look like, bubbles here and there or is it packed with bubbles

I wonder if it has to do with the amount of xanthan gum that im using or what

ill try that, I do the torch for custard to get rid of the bubbles as well

what is the liquid you're using?

How are the bubbles getting into the liquid? Are you using a blender, a stick blender. If you are make the solution very thick with xanthan gum, then you should expect any bubbles to be trapped. With a thick solution, you need to avoid trapping bubbles in the first place by mixing in the ingredients in a way that doesn't draw much air into the solution.

Ok tnx señor chris, well i tried it again last nite and finally got it. I just left my tomato water rest an extra nite and my alg bath at room temp.

I also have the trapped bubbles issue. I blended 250 grams of orange juice with 3 grams of Lactate and 1 gram of Xantan. So if I understand your comments I can blend when I add the Lactate and leave it stand a little, and then whisk in the Xantan gum by hand? Or would you advice whisking all these mixtures anyway?

You can run the mix through a fine mesh sieve to get rid of a lot of bubbles.

One method that I've seen recommended is to use a chamber vacuum sealer to remove the air bubbles. I don't have one of those, but the next time I make an alginate solution, I'm going to give this a shot: http://www.foodsaver.com/accessories/FSFSAM0306-DTC.html
