I was lucky enough to have a friend share some of his morel hunting trip bounty. I could not think of a better opportunity to pair them with a rice I recently purchased in Chicago (Acquerello risotto rice). Nice!! One of my favorite brands of risotto. I am curious of whether your wife doesn't like the texture or the taste of mushrooms (I know a fair number of people like that). In those cases, a mushroom puree or mushroom stock does well when combined with other elements.....if you want to give your wife another chance. :-)

@Todd_Shewman_38102 She is funny about certain textures and some flavors. Mushrooms fail to score on both categories for her. Sadly, I know it is all a mental block because I have manage to sneak some items she claims not to like without her knowledge and she has enjoyed the dish. Unfortunately it is hard to sneak/mask the mushrooms in a mushroom risotto.
