Sodium Alginate

Hi. I bought some Sodium Alginate from an Australian supplier. The label says it requires high shear mixing for best results. My humble home kitchen doesn't have,and won't be getting, that particular piece of equipment. Will my Cuisinart immersion blender do the job? Also can you buy just the Sphere Magic from the Modernist Pantry? Thanks in advance.

Yes, and yes. I use my stick blender for that purpose all the time, pretty much exclusively actually. And I purchased sphere magic from modernist pantry before the spherification kit came about so it should be still available there.

Honestly, I've had better results with my stand blender, than my hand blender. In my own case, the immersion blender incorporates too much air, requiring an extended settling period. My stand blender, conversely, mixes things quickly, and with about half as much air. I've also not had the problems with lumps, using the stand, whereas it has been a problem with the stick.
My ingredients didn't come from Modernist Pantry, at least not yet

I have a chamber vac so I suck out the bubbles instead of letting it rest, but yes I agree it does incorporate a lot of air.
