I was wondering if anyone has used and of the products from Anson Mills; I have seen them alot on Mind of a Chef and I was wondering if anyone has used them and how they like them in product quality.
Especially: SEA ISLAND RED PEAS and CAROLINA GOLD RICE

Their products are THE BIZNESS. The products you mention are essential for true Hoppin' John. Their grits are awesome too. Here's some Anson love from my own kitchen... Hoppin' John and shrimp and (blue) grits:

I have only gotten their grits and farro, but as Brandon said, they were great.

On their website they say that you have to cook them a bit differently than grocery store common goods. Any tips on the "difference" of the cooking process? Thanks.

They have a lot of recipes on their website, and that's the best place for you to start. But for example, their grits need to be soaked overnight or else you have to cook them forever and ever... and ever. Even their "Quick" grits need an overnight soak and 30 minutes on the stovetop. Cooking Carolina rice Gold also requires some finesse. It has a lot of starch, and if you want to get fluffy, separate grains, the suggested procedure involves a pre-rinse, par-cook, post-cooking rinse, and finishing by spreading on a sheet pan in the oven. It's a lot of work compared to Uncle Ben's, but it's worth it. I should add that you can ignore all those steps and end up with delicious, denser, stickier rice -- or even something for making congee -- if you play around with it. All that's to say, it's a versatile product but getting the exact result you want often requires more thought and effort than simply boiling up store-bought enriched rice. But again, it's worth it.
