I'm a big fan of Nick's banana bread (my kids even more so) and slight modifications thereof. I haven't been able to tag Nick so feel free to share with him if you can. For flourless cake, and in this case, I had made 4 loaves yesterday for the kids so I took one and made an amaretto french toast with it. Cooked it per usual then cooked it again in caramel for a nice crust with a moist interior. Bit of sin for the holy day. :-)
