I have been using modernist pantry and would also recommend. Shipping is a flat rate so make a list of everything you might want in the near future and order it all at once. I keep having to place additional orders. First order they'll ship for free...check the FAQ on the site...they list the code there.

There're a few brands on Amazon too, one of the ones that comes to mind is WillPowder. They seemed to get good reviews, and reasonable pricing... Personally, haven't ordered anything of theirs, but may give some of the other stuff a go from Modernist Pantry.

You can also order stuff from Modernist pantry through amazon, it doesn't come with the free shipping but if you have gift cards I believe you can use them that way. I highly recommend Modernist Pantry, they have great customer service and the descriptions on the site about each ingredient is very comprehensive so you know exactly what your getting.

I've ordered powders through both Willpowder and Modernist pantry. Both have been very good. I've also ordered equipment through molecularrecipes.com. I go to my local professional baking store for items like sodium citrate, glucose, isomalt and cheap molds.

I got some sodium alginate, chalcium chloride and Xanthan to start. I heard from a friend that I can get agar agar at whole foods so I am headed there tomorrow, I live in a small town and any real store is atleast an hour away. I will be doing basic spherification for some cilantro juice in a thai coconut curry soup and also basic spherification with melon juice for dessert.

Agar agar you can usually find at asian stores too.

Xhantan since it is used in baking is easy to find locally as well. - Health oriented stores will have it as well as guar

You can find a lot of things these days in the gluten free section of a well stocked grocery store. Yesterday I saw agar agar, xantham, and guar gum in the local grocery store.

Here goes a good one www.solegraells.com, example, Xantana gum: 63$ on modernist pantry and 30$ on sole graells (sime size obviously). Surely that the sipphing cost will be higher but not that much.
