I wish I knew how they measured these things. The San Pellegrino list and Michelin guide don't often line up neatly (Noma is still a two-star place, for example), the whole thing seems very arbitrary to me.

many of the former top US restaurants hopped on a slide. Per Se, TFL, Momofuku, etc etc. @Mathew Snyder is pretty accurate, it's a bit arbitrary but for some US restaurants it's not a surprise. At least on the surface they don't appear to have changed their cuisine and presentations allot and that "might" play a roll. The majority that have slid don't seem to have the social media push he others do. Though professional and understated, some are represented better than others. The top ones seem to also focus on not themselves but rather what and who is around them....it's like their terroir is dynamic and fluid.

Michelin is more about the traditional formal dinner idea. I don't think you can have three Michelin stars without white tablecloths in a fancy dinner room and Noma doesn't have either of these but it still was an amazing experience. Much more than most three stars restaurants.

Food and Wine listed their top 10 this morning. There is a thread on Keller's restaurants not making the top 50 there too.

interesting list. Just made reservations for the SO's birthday. Minibar. Should be interesting. After Alinea, the bar is set pretty high.

I haven't been to the Minibar for a few years, but I really enjoyed it. You are sitting right infront of the chef and can ask questions as he is preparing your food. Loved that part!
